I was bored to hell in Malta, it has only 2 sand beaches there is Gozo as interesting relaxing island. I would suggest Malta for a 3 day (1 day valetta / one scuba round trip / one Gozo) trip in combination with Sicily. The May is perfect later in summer its too hot.
Bulgaria is nice and cheap for a mixed week - party and nature - take a bus down to south and enjoy the calmer places - but the water will be maybe still cold in May.
Cyprus is perfect for beach bathing holiday in May but more expensive for party people - its overcrowded with Russians this time.
